The Best Vegan Popcorn Recipe + Sake Summer Cocktail

Popcorn, it’s not just for movies anymore. Luckily, I have been seeing popcorn more and more on bar menus and offered as a complementary snack. I had my engagement party last week at Raffles rooftop bar and they served popcorn. Everyone was talking about how delicious it was.

It really is an easy thing to have ready on the table for a party or when you have friends over. The thing is, you can make vegan popcorn with so many different flavors, the best popcorn does not have to be your standard butter or cheese flavor.

Besides being delicious the best part is that it can be also be healthy! Popcorn itself is a whole grain that is high in fiber and low in calories. Add some spices or herbs rather than butter and you have a flavorful, healthy snack or appetizer. This recipes uses nutritional yeast and chili powder to spice it up and step it up a notch. So the next time you people come over you will always have a go to, quick appetizer you can pop up in minutes!

The Recipe:

1 cup popcorn kernels

1 teaspoon coconut oil

1 Tablespoon chili powder, more or less depending on how spicy you like it

2 Tablespoons nutritional yeast

You don’t actually need to measure these out, sprinkle a little on the popcorn, taste, and adjust accordingly.

  1. Heat up a large skillet or saucepan over medium high heat. Add a few drops of coconut oil and let heat up for 10 seconds. When the pan is really hot add the popcorn kernels. Top the pan with a lid and  continue moving the pan so the kernels don’t burn on one side. Let heat on the stove until all the kernels are popped.
  2. Take the popcorn off the stove and drizzle remaining coconut oil over the popcorn.
  3. Sprinkle with chili powder and nutritional yeast and shake.

Recipe for Sake to Summer Cocktail

Makes 1 cocktail

1 tablespoon or about 1/4 of a lemon juiced

2-3 oz sake

5 oz coconut sparkling water or coconut water

  1. Juice lemon into a cocktail glass, pour chilled sake and coconut water into the glass. Stir and serve with a slice of lemon.
