Spring Rolls with Ginger Mango Sauce + Passion Green Tea Whiskey

My favorite food in Manila is the mangos. They are everywhere and they are so sweet, juicy and absolutely delicious. When I saw this recipe for spring rolls with ginger mango dipping sauce I actually thought it sounded a little weird. I made the sauce but still was hesitant to try it, but much to my surprise and delight it was perfect!

This mango sauce has a nice kick from the ginger and the sriracha chili sauce and the mango acts as a natural sweetener.

The spring rolls are so easy not to mention super healthy! Simple. Fresh. Raw. Green. You could use any veggies really and sub out the basil for mint or cilantro if you wanted to. I thought this was the perfect mild and refreshing spring roll for the flavorful dipping sauce.


I’ve never made a cocktail with tea before. Tea has amazing health benefits, especially green tea. Green teas is a powerful antioxidant in the body and has shown protection against heart disease and cancer, increased metabolism, and benefits on the brain. I don’t want to go into too much detail of the health benefits considering I am posting this as a cocktail and whiskey does not have the same benefits. Although, you can definitely make this drink without the whiskey if you don’t want the alcohol.

The Recipes:

Spring Rolls

makes 30, modified from Lazy Cat Kitchen

2 zucchini

2 large head of broccoli

1 head leafy green lettuce

a bunch of fresh basil

15 rice paper wrappers

Mango Sauce:

1 ripe mango

2 Tablespoon white miso

2 Tablespoon soy sauce or tamari

1 Tablespoon sesame oil

1 tsp chili sauce

1 Tablespoon fresh grated ginger

  1. Thinly slice zucchini in to strips with a vegetable peeler or mandoline.  Slice broccoli into strips, including the stalk.
  2. Dip rice paper wrappers into water for 10 seconds until slightly soft but still stiff, they will continue to soften after they are removed from the water.
  3. Lay the rice paper on a plate or cutting board and layer lettuce, zucchini, and basil. Roll up to form a spring roll.
  4. To make the dipping sauce add all ingredients to a blender and blend until smooth. Adjust ingredients to taste.

Passionfruit Green Tea Whiskey

makes 3 drinks- modified from Lady and Pups

3 passionfruit

3/4 cup green tea, chilled

3oz whiskey

2 teaspoons honey

  1. Spoon out passionfruit into cocktail shaker. Add green tea and honey and shake.
  2. Add whiskey and shake until well blended. Pour over ice.
