Coffee Spiced Carrot Crostini’s for a Healthy Christmas Appetizer

It is one week before Christmas and if you need a last minute recipe to bring to a party this is the perfect one. Coffee and carrots sound like an interesting combo but they compliment each other perfectly. The spices are flavorful and warming, with the carrots becoming caramelized and slightly sweet. The recipe will impress everyone, it is delicious and best of all it is incredibly simple to make.

I made it as a salad originally for a pop-up dinner I hosted. I had some leftovers and because I hate wasting food I wanted to recreate the carrots into another dish. The roasted carrots are good on their own, as a salad, or on this crostini, you really can’t go wrong.

The Recipe:

Coffee Roasted Carrots:

1 pound of carrots, peeled and if large cut in half or quarters

3 tablespoons extra-virgin olive oil

1 teaspoon salt

1 teaspoon ground coffee

1/2 teaspoon five-spice powder

3 tablespoons lemon juice

1 tablespoon minced or grated fresh ginger

1 cup arugula leaves

1 baguette

4 tablespoons goat cheese or feta (optional)

  1. Preheat the oven to 425 F. Line a baking sheet with aluminum foil and place in the oven. You want the baking sheet to be hot when you add the carrots.
  2. Combine the carrots, olive oil, salt, coffee, and five-spice powder in a large bowl. Mix to coat the carrots evenly. Spread the carrots in a single layer on the baking sheet, don’t crowed the carrots, you want them to get a nice char. Roast them until they are tender and browned, about 25 minutes.
  3. Remove the carrots from the oven and let cool slightly. Add lemon 2 tablespoons lemon juice and fresh ginger to the carrots. Roughly mash the carrots with a fork so they spread more easily on the bread.
  4. Slice the baguette on an angle. Spread cheese on the bread. Toss the arugula with the remaining lemon juice. Top the crostini with carrots and a few leaves of arugula.
