Apple Cider Bourbon Cocktail + Baked Cinnamon Apples

I am back in Michigan, from Manila for a few weeks this fall. Since I arrived its been a wonderful whirlwind of events. I arrived and the next day left again for a trip to Maine for a wedding. The colors were beautiful, trees are all brightly colored in oranges, yellows, and reds and the sun is still shinning, although chilly it has been wonderful!

It is my favorite time to come to the Midwest because it is not too cold but you still have the feeling of cozying up with a warm drink and a bowl of chili. I usually make an appetizer recipe with a drink pairing but apples are coming out of our ears we’ve picked so many so I decided to make a easy, delicious dessert recipe to go with our night cap cider drink.

The cocktail is not too heavy, not too strong, and just the right amount of warming. My mom doesn’t like bourbon and even she loved this fall flavored cocktail! The cinnamon and ginger add a perfect spiciness to the cider, while adding some water makes it a little less sweet and gives it a thinner consistency which I like in a cocktail.

The apples are delicious just simply baked with a little brown sugar and cinnamon. Cinnamon actually has amazing health benefits including anti-inflammatory properties and has shown to help regulate blood sugar! And that is just an added bonus to the warming, spicy flavor it adds, even in just a small amount.

The Recipes:

Apple Cider Bourbon Cocktail

makes 2 drinks

1 cup apple cider

1 cup water

1 cinnamon stick

1/4 teaspoon ginger powder

1/4 teaspoon allspice

2 oz bourbon of choice

1 oz triple sec or orange liquor

Bitters of your choice (optional)

Cinnamon and brown sugar for rim garnish and apple slices.

  1. Bring apple cider, water, and spices to a boil in a small saucepan over medium-high heat. When the mixture is simmering turn off the stove and let cool slightly.
  2. Sprinkle cinnamon and brown sugar on a plate. Thinly slice an apple slice through the center, so you get a round piece for garnish. Run the apple around the rim so the cinnamon and sugar will have something to stick to. Sugar the rim by rolling the glass in the cinnamon and sugar mixture.
  3. Add 1 oz of bourbon, 1/2 oz of triple sec to your glass. Top it off with warm apple cider mix and a few drops of bitters (optional). Garnish with an apple slice.

Baked Cinnamon Apples

Serves 2

2 apples

1 teaspoon cinnamon

1 teaspoon brown sugar

  1. Preheat the oven to 350 F.
  2. Slice the apples in half and remove the seeds and core area. Sprinkle the cut side with cinnamon and sugar mixture, or you can even use the same mix you were using to rim the cocktail glasses. Place on a baking sheet cut side up. Let bake for abut 30 minutes until the apple is soft and you can see the juices running bubbling.
  3. Drizzle caramel syrup if you want to but they are great on their own!
